Chilli con Carne

I usually make a large pan of this, having one portion once it's ready and portioning the rest into containers for refrigeration.

Ingredients

  • 1x large brown onion
  • 2x red bell peppers
  • 1x tsp garlic granules
  • 1x tbsp ground coriander
  • 1x tbsp ground paprika
  • 1x tbsp ground cumin
  • 1x tbsp chilli powder
  • 2x tbsp tomato puree
  • 1x tbsp yeast extract (Marmite)
  • 1kg beef mince (10% fat)
  • 2x 400g tins of chopped tomatoes
  • 1x 400g tin of red kidney beans (drained)
  • 1x tbsp extra virgin olive oil
  • 2x tbsp beef gravy granules (optional)
  • 1x tbsp chia seeds (optional)

Preparation

  1. Dice the onion and peppers and leave to one side

Method

  1. Heat the olive oil in a large pan on a low-medium heat
  2. Add the beef mince to the pan and cook until browned
  3. Add the diced onion and peppers to the same pan and cook for 10 minutes
  4. Stir the garlic, coriander, paprika, cumin, and chilli powder into the mixture
  5. Add the chopped tomatoes, tomato puree, and yeast extract to the mixture and stir
  6. Place the lid onto the pan and allow to simmer for 20 minutes
  7. Drain the red kidney beans, add to the mixture and stir
  8. Leave to simmer for another 10 minutes with the lid off
  9. Serve on a plate of rice

Serving Suggestions

Portion the remaining chilli into airtight containers and store in the fridge.
