Slow Cooker Beef Stew

Ingredients

  • 600ml just-boiled water
  • 1x beef stock cube
  • 2x tbsp tomato purée
  • 2x brown onion (diced)
  • 4x carrots (thinly sliced)
  • 4x celery sticks (chopped)
  • 1x tbsp yeast extract (Marmite)
  • 1kg braising steak
  • 1x 100g bacon lardons
  • 3x tbsp plain flour
  • 1x tbsp dried mixed herbs
  • 1x tsp sea salt
  • 1x ground black pepper (to taste)

Preparation

  1. Mix the 600ml of boiler water in a jug with the beef stock cube, yeast extract, and tomato purée, then leave to one side
  2. Dice the onions
  3. Thinly slice the carrots
  4. Chop the celery sticks into 2cm chunks

Method

  1. Add all of the vegetables to the slow cooker pot
  2. Add the braising steak and bacon lardons to the pot
  3. Sprinkle the flour, mixed herbs, salt, and black pepper into the pot
  4. Pour the mixture from step 1 into the pot and stir well
  5. Replace the lid on the slow cooker, set to low, and allow to cook for 8 hours

Serving Suggestions

Have on its own or serve with mashed potatoes. 😋

Portion the remaining chilli into airtight containers and store in the fridge.
